Before discussing the cooking process, the first thing you need to know about this recipe is that you should use skin-on pork belly. This will give you those delicious, crunchy bites.

  • The first step is to cut the pork belly into 1-inch cubes.
  • In a deep pot, add water, half an onion, one head of garlic, and salt, then bring to a boil. Once the water comes to a boil, add the cubes of pork belly. After five minutes, remove impurities from the pork belly.
  • Then, add the bay leaves and peppercorns and let them cook for another 20 minutes. Then remove it from the pot and pat it completely dry with paper towels (make sure it is completely dry before moving on to the next step).
  • In a deep skillet, heat the oil or lard over medium-high heat. Add the pork belly cubes and reduce the heat to medium-low.
  • Cook for 25 to 30 minutes, turning the pieces every five minutes. The pork will release its own fat as it cooks.
  • Increase the heat to high and continue cooking for an additional 10 minutes, stirring frequently, until the pork is golden brown on the outside and tender on the inside.
