Cuban Chicken Soup Recipe

Serves: 6 · Prep: 15 minutes · Cook: 45 minutes

Ingredients

  • 1 whole chicken, cut into pieces (or 2 lbs bone-in chicken thighs)
  • 10 cups water
  • 1 onion, quartered
  • 4 cloves garlic
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 1 green bell pepper, chopped
  • 1 tsp ground cumin
  • 1 bay leaf
  • Salt and pepper to taste
  • Juice of 1 lime

Instructions

  1. Put the chicken, water, onion, and garlic in a large pot. Bring to a boil, then lower to a simmer.
  2. Skim the foam off the top as it cooks, about 10 minutes in.
  3. Add the carrots, potatoes, bell pepper, cumin, and bay leaf. Simmer for 30 minutes, until the chicken is fully cooked and the vegetables are tender.
  4. Remove the chicken, shred it off the bone, and return the meat to the pot.
  5. Add the lime juice, taste, and adjust the salt.
  6. Serve hot, with rice on the side if you want it more filling.

Cuban Chicken Noodle Soup Recipe

Same base soup, different finish. This cuban chicken noodle soup recipe is what a lot of people are actually looking for when they search chicken soup cuban, since it’s the version closest to a classic sick-day bowl.

Follow the cuban chicken soup recipe above exactly through step 4. Then, instead of serving as-is, add 1 cup of small pasta (fideos or broken spaghetti work well) to the pot in the last 8-10 minutes of cooking, until the noodles are tender. Skip the rice on the side if you’re doing the noodle version, it’s already a complete bowl on its own.

What Is Cuban Chicken Soup Made Of

Cuban Chicken Soup

Chicken, water, onion, garlic, carrots, potatoes, bell pepper, cumin, bay leaf, and lime juice at the end. Some versions add corn on the cob or a splash of tomato sauce, but the version above is the standard base most home cooks start from.

Chicken Soup Cuban Style vs Regular Chicken Soup

The biggest difference is the seasoning and the lime. Regular American chicken noodle soup usually leans on parsley, celery, and sometimes thyme. Cuban chicken soup leans on cumin, garlic, and a finish of fresh lime juice right before serving, which brightens the whole pot instead of leaving it flat.

Is Cuban Chicken Soup Healthy

Yes, more than most Cuban dishes actually. It’s mostly broth, lean chicken, and vegetables, with no frying and no lard involved anywhere in the recipe. The lime juice at the end also means you’re not relying on extra salt for flavor.

Can You Freeze Cuban Chicken Soup

Yes. If you’re planning to freeze it, hold off on adding potatoes or noodles until you reheat it, since both go mushy after freezing and thawing. Freeze the broth, chicken, and firmer vegetables, then add the potatoes or noodles fresh when you’re ready to eat it.

How Long Does Cuban Chicken Soup Last

About 4 days in the fridge in a sealed container. In the freezer, without the potatoes or noodles added yet, it holds up well for around 3 months.

Chicken Soup Recipe Cuban Families Actually Use

There isn’t one single fixed version, every household adjusts it a little. Some skip the bell pepper, some add a splash of sofrito instead of plain garlic and onion, and some serve it over white rice instead of eating it as a straight bowl of soup. If you’ve made Cuban sofrito already, stirring a spoonful into this soup instead of the plain garlic and onion base is a solid way to make it taste more like a home-cooked version.
