What is Cuban sofrito?

Cuban sofrito is a cooked mixture of onion, green bell pepper, garlic, and tomato, usually seasoned with cumin and oregano. Unlike a raw sauce, sofrito is cooked down until soft — it’s meant to be the flavorful starting point you build a dish on top of, not something served on its own.

You’ll also see this word spelled a few different ways depending on the source — sofrito, soffritto (the Italian spelling), sofrita, or even typed as softito or fofrito. They’re not all describing the exact same thing — Italian soffritto, for example, is a similar idea but uses different ingredients and technique — but if you’ve landed here searching any version of that spelling, Cuban sofrito is what this recipe covers.

Is sofrito the same as recaito?

Not quite, though they’re related. Recaito is the Puerto Rican and Dominican version — usually green, made with culantro, cilantro, and peppers, and used more as a raw seasoning base. Cuban sofrito is cooked, tomato-based, and a bit more savory-sweet than herbaceous. Different islands, similar idea, different results.

How long does homemade sofrito last?

About a week in the fridge in a sealed container, or up to 3 months frozen.

Can I make sofrito ahead of time?
